Summer Basil Pesto

Basil Pesto
Fresh basil is a summer favorite.  For a quick and easy summer supper, toss pesto with hot pasta (fusilli is a great choice of pasta for this combination because it "catches" the pesto perfectly) toss pasta with chunks of ripe tomatoes and cubed Brie ... your tasters will come back clamoring for more, more, more! 

2½ cups firmly packed fresh basil leaves
2 large garlic cloves
½ cup chopped almonds
½ cup fresh grated Parmesan cheese
½ cup olive oil
Salt to taste

In a food processor, combine basil leaves, garlic cloves, chopped almonds and Parmesan cheese. While the motor is running drizzle olive oil through feed tube and whirl mixture until well combined. Season with salt. Yield: About 1 cup
