This is one of my go-to weeknight dishes mostly because it's super simple and I love a one dish meal. Toss your favorite cooked pasta with sauteed red peppers, a medley of mushrooms and onions, add some cooked sausage, season with olive oil, salt and pepper and fresh grated Parmesan cheese. Voila, you've got a meal you will not soon forget! Serve with slices of good quality ciabatta bread or rolls and olive oil for dipping.
